Foodie friday {No. 6} Go Green dip

Go Green Bean Miso Dip (vegan, gluten-free, low-calorie, easy, tasty, fun)

From bean dip to spinach, hummus to salsa, nothing makes a chip, cracker, or veggie taste better than a huge scoop of dip.  Our taste buds may love these dips, but our waistlines hate them, since many are packed with unhealthy and ‘empty’ calories.  Even some of the healthier dip options like hummus or guacamole (though featuring healthier ingredients) are still high in calories. So this month, guacamole may have to step aside for our Go Green Miso Dip, sure to be a new fan-favorite in the green dip department!

The recipe is adapted from celebrity nutritionist and author Kimberly Snyder, and its simple ingredients do not include any concentrated protein (like nuts) or concentrated fats (like avocados), which can be more difficult to digest.  It makes a great afternoon snack that can boost your energy without a sugar or caffeine fix. While it looks very green, the appearance is deceiving as it is packed with so much flavor that you will forget you’re dipping into something healthy! It would be the perfect fall tailgating dip to pass!

Prep time: 7 minutes

Enjoy time: Easily packable and perfect for snacking on between meals – will last in the fridge for up to five days.

Equipment needed:  pan, blender or food processor, spoon, knife and bowl


¼ cup vegetable broth for sautéing

2  cups fresh or frozen green beans

½ white onion (chopped)

pinch or two of sea salt

2 tbs. lemon juice

½ cup fresh parsley (chopped)

2 tsp. miso paste

½ tsp. cayenne pepper (or black pepper)

2 tbs. nutritional yeast (optional)

*for serving: veggie sticks, crackers, pita, or tortilla chips, anything you love!


1)   Chop the onions and snap the ends off the green beans.  Place them with the vegetable broth in a pan and sauté them for a few moments on medium heat until they soften.

2)   Meanwhile, chop parsley and then add it and the pepper to your mixture.

3)   Remove from heat, let cool a bit then add to blender along with all other remaining ingredients.

4)   Blend until smooth and serve at a dip with your favorite snacks.
